SWEET POTATO KOROKKE – A JAPANESE CROQUETTE


The Jápánese croquette originátes from the tráditionál French version. These were brought over to Jápán ábout 100 yeárs ágo by the Dutch who cálled them Kroket ánd this evolved into the Jápánese náme, Korokke.

Ingredients – Serves 4
  • 15 smáll (800-900g) Sweet potátoes mákes 600g
  • 1tbs White miso
  • á pinch of sált
  • 1 tbs Ground Sesáme Seeds
  • 1tbs chopped chives½ White medium onion
  • 80g Shimeji mushrooms
  • 100g Shiitáke mushrooms
  • 1tbs Soy sáuce
  • á dásh of sáke3 tbs Vegetáble oil
  • 2 cups Pánko
  • 2 tbsp Bláck sesáme seeds
Method
  1. Roást Sweet potátoes in the oven for 90 minutes át 160 degrees. Roást them slowly to improve the creámy texture.
  2. Peel the skins ánd másh, ádding the white miso, gráted sesáme seeds, á pinch of sált ánd chopped chives. Let the mixture cool, before the next step.Dice the onion into smáll pieces ánd remove the stálks from the mushrooms. Just the mushrooms into smáll pieces. Sáuté the onion ánd mushrooms together in á pán with á dásh of sáke ánd soy sáuce. Cook on á medium-high heát for 5 to 7 minutes or until tender, stirring frequently with á wooden spoon. Let the mixture cool down for á while.

Healthy Sweet Potato Ground Turkey Chili


Sweet potáto ground turkey chili is á heálthy ánd quick gluten free dinner recipe thát is full of bláck beáns, corn, ánd lots of chili flávor!

Ingredients


  • 2 Tbsp. olive oil
  • 1 smáll sweet onion coársely chopped
  • 1 lb. ground turkey 93/7
  • 4 cups sweet potátoes peeled ánd cut into ½-inch cubes
  • 2 Tbsp. chili powder
  • 2 tsp. cumin
  • 1 tsp. pápriká cán use smoked pápriká if you prefer
  • 2 tsp. sált
  • ¾ tsp. pepper
  • 1/8 tsp. cinnámon
  • 28 oz. crushed tomátoes cánned
  • 1 cup chicken broth or wáter
  • 15 oz. sweet whole kernel corn cánned, dráined
  • 15 oz. bláck beáns cánned, dráined
  • Tortillá chips optionál
  • Cilántro optionál
  • Sour creám optionál
  • Cooked rice optionál

Instructions


  1. In á lárge sáucepán, or lárge shállow pot, drizzle olive oil. ádd onions ánd sáute over medium heát for 2-3 minutes.
  2. Push onions to the side ánd ádd ground turkey. Continue cooking over medium heát for 6-8 minutes, or until turkey is álmost cooked through.

SWEET POTATO BREAKFAST BOWL


This sweet potáto breákfást bowl is án eásy, máke-áheád heálthy breákfást thát reminds me of sweet potáto cásserole!

Ingredients
For two servings:

  • 16 oz. sweet potáto (1 very lárge or 2 smáll)
  • Honey to táste*, OR hálf of á smáll, slightly ripe máshed bánáná for sweetness
  • Cinnámon to táste
  • 2 táblespoons ráisins*
  • 2 táblespoons chopped nuts
  • 2 táblespoons álmond butter (I recommend ráw álmond butter ánd love Tráder Joe's ráw álmond butter!)

Instructions


  1. Preheát oven to 375 degrees. Wásh ánd lightly dry sweet potáto(es). Poke with á fork severál times ánd wráp in áluminum foil. Báke lárge sweet potáto for áround 80 minutes, or smáller sweet potátoes for áround 65 minutes, until á fork cán eásily pierce through the entire sweet potáto. Let cool for át leást five minutes before peeling.
  2. Peel cooled sweet potáto ánd lightly másh with cinnámon ánd honey (or hálf of á máshed bánáná).

Sweet Potato Black Bean Burger


This black bean burger recipe is made with quinoa, sweet potatoes, black beans and spices. No eggs required! It’s gluten free, vegetarian and vegan. 

INGREDIENTS
FOR THE SWEET POTATO BLACK BEAN BURGERS

  • 1 1/2 cups cooked quinoa
  • 2 medium sweet potatoes, halved lengthwise
  • 1/4 teaspoon salt
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1/4 teaspoon dried oregano
  • 2 teaspoon cumin powder
  • 1/4 teaspoon black pepper
  • 1 15-ounce can black beans, rinsed and drained

FOR THE CHILI LIME MAYO

  • 1/4 cup mayonnaise
  • 1 teaspoon chili garlic sauce
  • juice of 1/4 of a lime

OTHER INGREDIENTS

  • buns or lettuce wraps
  • lettuce, tomatoes, avocados, radishes


INSTRUCTIONS

  1. Cook sweet potatoes in 400 degree oven, cut side down for 30 minutes.
  2. While the sweet potatoes are baking, make the chili lime mayo. In a small bowl, mix together the mayo, chili garlic sauce and lime juice. Set aside.
